Phillip,
Several people have hacked the tops off with varying results.
Here is a Texas Hunting Car Conversion
Here is a 4 Door Pickup from a Station Wagon
I used to have some photos of a wagon made into a major canvas top sunroof and a different convertible conversion but I can't seem to find them right now.
The hunting car conversion is interesting in that they ran a brace across between the B pilalrs which makes a lot of sense given the amount of flex in a Checker body even with the top on. I don't know of anyone who has worked out installing a folding convertible top on one ... but one possibility would be to take a look at the "retractable kits" they sell for doing a retractable hardtop on the 64 - 66 Mustang notchback coupe and see if you could adapt the kit. Otherwise I would say you will have to go through the lead sled 50's and 60's convertibles until you find something real close that could be modified.
